Fall is still no where in sight....sigh.... but I am ready for it....
Its been a little cooler....only 90 degrees.... instead of the usual 98.
Sunday: Mexican Casserole. I make this a lot, so you've probably seen the recipe. I make two and freeze one.
Monday: Meatball sandwich. I use the frozen meatballs. Heat them up in some BBQ sauce and put on a Hoagie Roll.
Tuesday: Short Ribs in crock pot. I modified this recipe from Campbell's Kitchen: Place 3 pounds of beef short ribs in crock pot with 2 tbsp brown sugar, 3 gloves of minced garlic, 1 tsp dried thyme leaves and 1/4 cup flour. Toss ribs to coat evenly. Add one can of french onion soup (I just use beef broth) and 1 bottle of dark ale or beer. Cook on low 8-10 hours and serve over noodles, rice or mashed potatoes (I use rice).
Wednesday: Using the rest of the Hoagie Rolls to make sandwich's, ham, turkey or sausage.
Thursday: Left overs- clean out the fridge- basically, you're on your own today.
Friday: Vann Egg Rolls in the deli section of your grocery store- already cooked. You just heat them up in oven. Only 2 weight watcher points each!

Thanks for the weekly menu ideas. At this point in my life, with everyone coming and going, and different schedules and all, it's so difficult to plan. Thanks for having all of us over!

My husband makes a weekly menu also...ours is getting a little bland, may have to steal some of yours!
The crockpot recipe sounds YUMMY! (And easy - HELLO!) Does your husband read the blog to know he fends for himself on Thursday? ;) I need to get back to menu planning - I used to keep track of lunch and dinners daily. Lots less waste that way!
