Blueberry cake masquerading as bread

I love to make bread.

I however, have not completely mastered the whole yeast thing... and by mastered, I mean, I really cant use yeast at all because I have no clue what I am doing with it, which is a problem when making bread.

The water is too hot and kills the yeast, or it is too cool and it does not activate, and when do you really know its ready anyway?

There are thousands of things that can wrong with yeast. I know, because I have experienced 947 of them.

Anyway...I try to solve my little problem by looking for bread recipes without yeast.

I also love blueberries. I really love them.

I love them so much I pay $5 for each small container of them in the dead of winter to put fresh ones in my morning oatmeal... and I go through two of them a week. (I think my husband may have just passed out....) Now that the blueberries are $1.50 for the large containers, I have been buying extra to throw in the freezer.

So I love bread recipes without yeast and blueberries.

This recipe I got from recipezaar was a little disappointing as it was not really bread.... it was cake, just calling itself bread. Every time I had a piece, I said to anyone in earshot, "This is not bread. This is secretly cake calling itself bread." and anyone in earshot did not really care, as they were busy eating all the cake, I mean, bread. No one else was complaining about it.

This is the recipe I found, with my own modifications:

Pre-heat oven to 350.

Mix 3/4 cup sugar with 3 cups of complete pancake mix, 1/2 cup milk (I used buttermilk), 1/2 cup chopped black walnuts (I used 1 cup walnuts), 1 egg and 1 cup blueberries (I used 1 1/2 cup frozen blueberries).

Bake in two loaf pans for 40-45 minutes.

Another hint that it is not really bread...it taste best when it is cooled and not hot, straight from the oven.

My grand-daughter love blueberries, when we go to the store blueberries always end up in my basket. I will need to make this recipe for them soon.

I can totally understand your yeast thing, as I was "yeast challenged" for years. I use instant yeast now and have become a baker. Anyway, your cake, ahem, I mean bread sounds delicious.

I love blueberries too! I buy them in big containers at Costco and eat them every morning with yogurt. They are one of the fruits that are best for you nutritionally too! I will have to try your blueberry bread, uh, cake recipe. thanks!

This sounds easy enough. I like the blueberries, but I have red raspberries growing......that might be pretty good too:)

It's a quick bread, and yes, quick breads can be very cake like! This sounds yummy - I might have to give it a try!
