Glass canister for kitchen storage. (I already have about 4 or these, so I am adding to my set) $.25















5X7 Frame. (I love this frame. Its very heavy with a velvet back) $1


















Large roasting pan with rack. (I already have one exactly like this, that was expensive. I thought it would be good to have a back up. I use it all year to bake 2 chickens on at one time) $1

The God Chronicles...Small Ways I've Seen God Working in My Life Lately

I haven't been feeling great lately, and I don't look so good either. I'm drinking a lot more coffee and diet coke. Yesterday, you would have caught me with a diet dr. pepper in my hand- twice- after running out of diet coke.

Even heavily caffeinated, I am still almost falling asleep at my desk.

That's because you wont find me almost falling asleep each night.

After much whining about not having enough time, being too tired, taking a survey of my friend's bible habits, asking advice and then praying, sincerely, for more time and energy to do meaningful bible study, God showed me where I had some time.... in the last place I would have looked for it... in the middle of the night.

About the lastcouple of weeks, like clockwork, he has woke me up- wide awake and alert- in the middle of the night, and directed me to my bible study chair for a good hour to hour and a half. I have finally found a quiet spot... where I would have never looked for it... sometime after midnight.

Today was not my most productive day.

Instead of staying late at work and tackling my inbox, I left on time and met an old friend for dinner.

Instead of rushing home to fold the clothes, I stopped and leisurely shopped at my favorite store.

Instead of cleaning the kitchen, I took a meal to an elderly friend and stayed to visit for a while.

Instead of going to bed early (or even on time), I am cooking again for a (different) couple at church so I can deliver it tomorrow after work when I wont have time to cook it.

Instead of scrubbing the tub, I took the old bread to feed the birds in the back yard.

Instead of cleaning the hard food floors, I watched the Crepe Myrtle tree blooming out my office window.

Nope, I did not get much on my list accomplished today.

A tale of two angel trumpets

Both of these angel trumpets were given to me by my husband's Aunt Dot. I planted both of them at the same time. They sit next to one another in the side yard.

This pitiful one looks like it can hardly stand up. It has no flowers, and no buds. So I don't even have a hope of any flowers anytime soon.



This one has so many flowers on it I cant even count them.




Did I mention they sit right next to one another?

One project down...

The back fence is completed!



The Bamboo is planted (although it is touch and go as to whether it will make it).




Next project is not so impressive and one you cant even see... another air conditioner upstairs. Meanwhile, the floor in the downstairs closet is just waiting in line to be tackled....

A woman who does not have sound thinking:

A woman who does have sound thinking:

is restrained in her thoughts, her tongue, her eating, her spending
and her reactions

is calm under pressure

is purposeful in the use of her time

is a good steward

is morally chaste

has a well-ordered life

show good judgment

doesn't "lose it" under pressure

responds in faith versus fear

guards her heart and mind

evaluates what she reads or hears in light of Scripture

is mentally disciplined

resists temptation

shows delayed gratification

demonstrates others-centered living

is diligent and faithful in her responsibilities

is intentional

is modest in dress and behavior

hopes in God

gives thanks in all things

makes wise, biblical decisions

prays

demonstrates the Spirit controlling her flesh

Famous Chicken Wiggle

My Aunt Myrtis lived next door to me and my Maw-Maw the entire time I was growing up. She moved to the country, giving up her brick house in the city, to help my grandma, her mother, and by default, me. we had a big family, so I am not sure exactly how the responsibility fell to her. . . I don't recall her being particularly closer to my maw-maw then the others were....maybe she was the only one willing to move? In any event...

Having her next door meant I ate many meals at her house.

She was a good cook and was famous for some of her dishes.

Literally.

She was Famous.

One of her most famous dishes was Chicken Wiggle, which I have adapted a little for myself by using less butter, less cheese, low fat soup and whole wheat spaghetti.

Here is the original and my slightly modified version.

Boil one chicken. When cooled, debone and shred. (or just get one already cooked in grocery store and shred)

In same water, cook one 8 ounce package of Spaghetti. (or add whole wheat Spaghetti to chicken stock and water)

Pre-heat oven to 375.

Saute one small diced onion, 1 diced green pepper and some diced garlic cloves, in 1/2 cup of butter, until limp. (I use only one or two tablespoon of butter)

Add one can of cream of mushroom (or cream of chicken) soup, one small can of evaporated milk and 1 pound of Velveeta cheese. (I use low fat cream of chicken soup and only 1/2 pound of Velveeta- play with it- you can always add more cheese on top later)

Cook until melted. Add shredded chicken and Spaghetti.

Salt and Pepper.

Transfer to baking dish and cook for 30 minutes.

Add a little more cheese on top before serving.

Look! A new Banana Bread recipe!

Low Fat Oatmeal Banana Bread
Weight Watchers Cookbook and originally found this on someone else's blog... but I cant remember who. So feel free to take credit for it.

makes 1 loaf of 10 slices, 4 points per slice


1 1/4 cup all-purpose flour (I used 1/2 wheat and 1/2 white)
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon ( I forgot to add this and it was fine without it)
3 tsp canola or walnut oil
1 large egg, beaten
2 medium egg whites, beaten
3 large bananas, ripe (I used 4)
1 cup uncooked old fashioned oats

Preheat oven to 350°F.

Grease and flour a loaf pan and set aside. (Its important to flour the pan well. I only half hearted floured the pan and it stuck everywhere there was no flour)

In a large bowl, stir together dry ingredients including the oats and cinnamon.

In a smaller bowl, mash bananas with a potato masher or fork. (I just threw them in- no mashing)

Add oil and whole egg and mix thoroughly.

Add the wet ingredients to the dry and mix well. Batter will be fairly thick.

In a medium sized bowl, with an electric hand mixer, beat the egg whites until medium stiff peaks form. Fold the egg whites into the batter in three additions. (I did not do this - none of this- and it turned out fine)

Pour batter into pan and bake until top of loaf is firm to touch, 45 to 50 minutes.
(45 minutes was too long for me- crust was too brown. Try 40 minutes first).

Remove from oven and allow to cool in pan for 5 minutes.

Flip out and cool on a wire rack for another 10 minutes.

Slice loaf into 10 equally sized slices. 4 points each

Freeze each slice and take out one at a time for breakfast or snack.

Its very filling and moist.
