last night for dinner, I made

Shrimp and corn pasta :
makes you want to take a nap and you have a lot of leftovers

Cook a package of wheat penne

Heat two tablespoons olive oil in skillet with one chopped red onion, one chopped red bell pepper, one chopped green bell pepper, one chopped jalapeno and two or three chopped garlic cloves. Cook until soft. 

Add one pound shrimp. cook until pink.

Add two tablespoons flour and two cups chicken broth, stir well and let cook for 5 minutes.

Add one cup of corn and a handful of fresh spinach, salt, pepper, and 1/4 teaspoon red pepper flakes..stir well

Add 1/2 cup of fat free half and half and one cup of fat free Cheddar cheese. stir well.

Cover and cook for 10 minutes

Drain penne and add to mixture stirring well.

Serve with more cheese sprinkled on top.

Go take a nap.
