Easy Skillet Apple Pie from Southern Living September issue


I love the September Issue of Southern Living. I have about 6 recipes in line to try. This was my first.

Easy Skillet Apple Pie. Round up 4 pounds of apples. Recipe said to use 2 pounds of Granny Smith and 2 pounds of Braeburn. I had a couple of Gala find their way in too.
Sit the pie crust on the counter to thaw while you (sit on the couch and) peel apples. 
Sprinkle one tablespoon cinnamon
and 3/4 cup of sugar 
and let them sit a minute while you 
melt one stick of butter in a cast iron skillet over low heat
and stir in one cup brown sugar (next time I'm only using 1/2 cup brown sugar- it was too sweet) 
stir over low heat for 2 minutes until dissolved 
Put one pie crust on bottom on top of the brown sugar/butter mixture and pile the apples on top. 

Cover with the other pie crust. Cut slits in the top and brush an egg white and some sugar on top.  Bake at 350 for one hour and ten minutes. 
Let cool for 30 minutes before eating with ice cream.
