Menu planning Monday
Its always hard for me to get back into the swing of things after a long vacation. I want to slowly get back into everything- especially work- but it never happens like that. Instead, I will be busier than ever. A simple planed menu helps, as does having some meals already cooked in the freezer and waiting for me.
Monday: Left over Jambalaya from a benefit sale at Church yesterday (always a good idea to buy extra and its for a good cause!) and Van egg rolls. You can buy these at Wal-Mart in the deli section for $2.50 for 5 egg rolls. They are Weight-Watcher Friendly! Only 2 points each!
Tuesday: 15 bean soup. I saw this bag in the dried bean aisle and thought I would give it a try. You add sausage, onion and garlic to the crock pot and have dinner in 10-12 hours on low. I will also bring some to work for lunch the next day.
Wednesday: Chicken Cakes from one-half of an already cooked chicken from freezer. I got the recipe from Big Mama
Thursday: Spaghetti. I have the meat cooked in the freezer and will add some sauce and have dinner in no time.
Friday: left overs!
