My Aunt Myrtis lived next door to me and my Maw-Maw the entire time I was growing up. She moved to the country, giving up her brick house in the city, to help my grandma, her mother, and by default, me. we had a big family, so I am not sure exactly how the responsibility fell to her. . . I don't recall her being particularly closer to my maw-maw then the others were....maybe she was the only one willing to move? In any event...
Having her next door meant I ate many meals at her house.
She was a good cook and was famous for some of her dishes.
She was Famous.
One of her most famous dishes was Chicken Wiggle, which I have adapted a little for myself by using less butter, less cheese, low fat soup and whole wheat spaghetti.
Here is the original and my slightly modified version.
Boil one chicken. When cooled, debone and shred. (or just get one already cooked in grocery store and shred)
In same water, cook one 8 ounce package of Spaghetti. (or add whole wheat Spaghetti to chicken stock and water)
Pre-heat oven to 375.
Saute one small diced onion, 1 diced green pepper and some diced garlic cloves, in 1/2 cup of butter, until limp. (I use only one or two tablespoon of butter)
Add one can of cream of mushroom (or cream of chicken) soup, one small can of evaporated milk and 1 pound of Velveeta cheese. (I use low fat cream of chicken soup and only 1/2 pound of Velveeta- play with it- you can always add more cheese on top later)
Cook until melted. Add shredded chicken and Spaghetti.
Salt and Pepper.
Transfer to baking dish and cook for 30 minutes.
Add a little more cheese on top before serving.
