Flourless peanut butter cookies

from Gourmet Magazine

Preheat oven to 350.

1 cup peanut butter ( I used ½ cup peanut butter and ½ cup Better than Peanut Butter)
½ cup sugar
½ cup brown sugar

Mix well, and add
1 egg
1 teaspoon baking soda

Mix well.

Shape into large walnut size balls and bake for 10 minutes.

variation number one:
After shaping in ball, make crisscross with a fork. Makes cookies little crisper.

variation number two:
Bake in a ball shape, when hot out of oven, stick chocolate (a Hershey kiss) in the middle of them.

variation number three:
Bake in ball shape, when hot out of oven, make dent with back of spoon and fill with jelly.
