Quick weeknight dessert - vegan dark chocolate with raw almonds and coconut
Another quick weeknight dessert, with all the ingredients already in the house. The entire recipe can be summed up in one sentence: melt dark chocolate, put on wax paper, press in raw almonds and coconut and put in fridge for 20 minutes. It has the added benefit of being vegan, which makes me feel like I'm being a little healthy while still really enjoying myself.
The original recipe ( here) includes adding some dried cherries, which I didn't have and skipped. It was pretty tasty without it. I have since secured some and will be trying it with them soon.

Yummy. Just like a candy bar.
Mmmm, I wouldn't feel too bad about eating those either. You get antioxidants from the dark chocolate and all kinds of goodies from the almonds. See, totally justifable! They would be good with cherries too.
