Day one of the Happy Project and Baked Pumpkin Oatmeal

Day one of the Happiness Project started with Baked Oatmeal. Do you know I love baked oatmeal? I really do. Thus far, Ive only loved it with blueberries. This morning, I was introduced to the pumpkin version.



I do a lot of cooking like this. With the laptop open in the kitchen so I can follow along.  This recipe started last night, by the way. This morning, I just popped it in the hot oven.  It came from my new favorite cooking blog,  Alaska from ScratchI especially enjoy her weather and what I'm listening to report.

Since its her recipe, I'll follow along:

Weather here: Another cool front is here! Yeah! Today it was 73. Tonight it will rain and tomorrow it will be 69.
Listening to: I heart Radio 70's channel (currently, "more than a feeling" by Boston)

Since I am the only oatmeal lover in the home,  I halved the recipe and put it in two smaller individual sized baking pans for  two days of breakfasts for myself only.

Here is how I did it, with modifications, of course:

Spray a small pan with cooking spray and sprinkle some raisins in the bottom of it.





Mix 1/2 cup of oatmeal,  1/4 teaspoon salt, 1/4 teaspoon baking powder and 3/4 teaspoon pumpkin pie spice and put in bowl over raisins.

mix 1/2 cup milk, 1/2 teaspoon vanilla,  one egg  1/3 cup pumpkin and  1/4 cup maple syrup. I didn't have maple syrup so I substituted molasses. 

melt three tablespoons of butter and mix in.




Pour liquid over oat mixture already in bowl and layer on some walnuts. original recipe said pecans but, no pecans in the house tonight, Walnuts it is.

Bake at 375 for 30 minutes.

Of course, I wasn't together enough at 6:30 this morning to get a picture of the cooked product. It didn't look as good as  Alaska from Scratch, but it was tasty and warm (and seasonally appropriate).

I also managed to get day one of  the Happiness Project completed and in the mail!

Instead of writing two letters and mailing them off, I wrote three. Couldn't stop myself. One to a wonderful woman who was my youth leader when I was teenager. She probably never knew I thought she was gorgeous and had a sweet spirit and wanted to be just like her. (And I guess I am since I am now a youth leader.) Another to an older woman at church who no doubt prayed countless times for me and affected my upbringing in ways I will never know this side of heaven. And the last to a cousin in prison. Yes. I have a cousin in prison. For life.  Who hardly gets any communication from his extended family. So today's happiness project reached inside Louisiana State Penitentiary, as well as right down the road from me.

The Happiness Project  day one was a successful day all around.

i love oatmeal too. But i never ventured away from my traditional stove top cooked oatmeal. I may have to now. And, I joined up with the Happy Day Project week too. It's nice to share happiness.

Oh. I love who you wrote your letters to. I was a Youth Leader years ago and still wonder where some of my small group girls are now!
I need to make some goodies for my Happy Day Project. Have a great and happy week!

Thanks for the compliments on the gym...I took classes at this university and I always loved the campus, it really is pretty. I'm so lucky I live just a few blocks from it, so wind, rain, sleet or snow, I have no excuse not to go!

I eat oatmeal and raisins every day so this looks really good to me. I'll have to try it.

On Sunday I had a girl from my children's church years ago write on facebook that she was thankful for my husband and I because we made her feel special. So I know your youth leader will read your note with happy tears.
