I have a confession to make....

I don't really like Banana Bread....

So a few weeks ago when I saw the bananas were over ripe, I hesitated before throwing them in the freezer. But, with the high costs of groceries, I was not willing to just throw them out either. I thought I would eventually find something to use them in ... I was thinking cupcakes...

But, I found this recipe from Katie, which I modified a little bit.

I have another confession to make....

I originally made it to bring it over to the neighbors.... but I just wanted a little taste first....it is so moist and fluffy..... so delicious.... the choclate chunks were so tasty....

Its not looking good for the neighbors....

Preheat oven to 350.

Spray Pam into a loaf pan

Mix 1 3/4 cup all purpose flour (I use half wheat and half white flour) with 1 1/4 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt and 1 package instant pudding mix (I used fat free/suagr free white chocolate pudding mix, but you can use Vanilla) set aside.

In another bowl, cream 1 stick of butter (or 1/2 cup of shorting) with 2/3 cup sugar. Add two eggs, one at a time, mix well. Add
2 Tbsp milk, 1 Tbsp vanilla extract and 3 large ripe banana (I threw mine in frozen).

Slowly add the flour mixture until blended well. Fold in 1 cup of chocolate chips (I used chocolate chunks).

Bake 45-50 minutes.

NOTE: This could be made WW friendlier by using egg beaters instead of eggs, using half applesauce and half butter, and using splenda or splenda blend (half sugar/half splenda).

Mmmm, sounds AWESOME!! I haven't had breakfast yet, so my stomach's really rumbling now!! I always freeze old bananas, too (I sometimes specifically BUY discounted old bananas to put in my freezer!), because we LIVE for these.

I don't think I like banana bread.
It does smell oh so good when it is piping hot, but I have to pass on it. I'll wait for your next recipe.
