WW friendly Baked Oatmeal Cake (and its not really cake...)

Happy Foodie Friday!

I saw this recipe in a Weight Watcher's cookbook.... but I never made it.

Truthfully, it did not sound so tasty until I saw it on my favorite recipe blog, My kitchen cafe. Why is it that when you see others enjoying something you suddenly want it too? but it worked out really well in this case.

Now I am kicking myself that I could have been making this for a few years before I actually did. It delicious, and Weight Watcher's friendly and is the perfect recipe for making when you have a little more time on a Saturday morning (or for overnight company.... hint....hint....). And it would be so good in the middle of winter.... it would be worth it to get out of the warm bed...

This makes 4 servings, so here is the plan...

The first morning you make it, it is perfect to eat like a piece of cake. You don't even need a bowl. Just pick it up and carry it around the kitchen with you. The next morning, when warmed in the oven, it is a little dry, so much better if microwaved with some milk.

Here it is with my modifications:

Pre-heat oven to 350 degrees.

Grease (or Pam) a 8x8 pan.

Mix 3 cups oatmeal, 1 cup brown sugar, 1/2 cup applesauce, 1 cup of milk, 1 cup egg beaters, 1/2 tablespoon baking powder, 1 teaspoon salt and 1 cup (or more) frozen blueberries (or cut up some bananas- my stand in when Blueberries are trying to be stretched at my house).

Cook for 20-25 minutes.

Where have you been all these years. That sounds really satisfying.
I know what you mean about the blueberries running out. You start to look at them differently than you did when you first had that 10 lb. flat of them on your kitchen counter and you were stuffing in your mouth.
