What I made for the neighbors- part 1


Why is it so hard to figure out what to share with others??

My neighbor had surgery and spent three days in the hospital. Get out the vegetable spray and spray a 9 x 13 pan.
 I spent the three days trying to figure out what to cook her husband and boys. Get a bowl and mix half a package of shredded Mexican cheese... or any cheese really....

 The Mr. finally suggested chicken enchiladas.  chicken enchiladas!!  Perfect!! Mix  in a handful of chopped cilantro. I just chop it with scissors, like all other professional chefs, right?
I think he secretly wanted me to make it for him. Add almost a whole can of enchilada sauce, but save a little. Any flavor will do, mild, medium, hot, burn your tongue off , anything.

These are one of his favorite things. Add some chopped chicken. Where are you gonna get chopped chicken from you ask? From the left over chicken you baked the night before of course.

He knows I make a little assembly line in the kitchen. Mix it well and get a flour tortilla. You could use corn but I like flour. Any size will do.
The Mr. also loves baked chicken. Start the assembly line.
Is it any wonder this is his favorite thing.  Put a little mixture in the middle.
and roll.
He gets baked chicken and enchiladas out of this. Line them up seam side down in the already sprayed pan.

The Mr. also knows that the old women have been talking to me at church. Pour that little bit of enchilada sauce over it.
And the old women at church tell me to take care of your own house before you start taking care of another one. Cover it in foil.
Bake at 400 for 25 minutes or so.

He has been watching me cook long enough to know  how I do it. Uncover and put more cheese on top. Put back in the oven for 5 minutes.

That its just as easy for me to make one pan as it is to make two. Add a little sour cream.

Dinner at your house and dinner to be delivered.
