Bobby Deen's Cheeseburger Casserole




















Sometime between running from one women's ministry event to another, the candle sale at Bath and Body Works, putting the car in the shop, cleaning the kitchen, packing up for goodwill drop off,  buying new shoes, and finding a possum in the backyard..... I made some dinner.

Bobby Deen's Cheeseburger Casserole, which frankly, is kind of like Hamburger Helper, but homemade, healthier and tastier.

cook about half a package of whole wheat corkscrew pasta
brown a pound of lean ground meat with one chopped onion and some chopped garlic
add two tablespoons tomato paste, two tablespoons dijon mustard,and a large can crushed tomatoes
add salt and pepper, stir and cook a little to incorporate
add the cooked pasta and stir to coat
put into casserole dish (or individual serving casserole dishes), add cheese on top
cook for 10 minutes in hot oven until cheese melts
add diced pickles (or relish) on top

My favorite thing to do is make them in individual portions and bring to work to heat up.
